For breakfast I used mimic Cream as well.
I had my "peaches n cream" oats with mimic cream, stevia and salba. Oh wow the mimic cream really made it creamy and Delicious! Wow! Check that out! You cant get better than this I tell you. It was the P-E-R-F-E-C-T breakie! Yum. Oh but that is not all, I put the mimic cream to some goood use this week, for sure.

This week for lunch I am going to have boca salads (so no pictures today). Simple and you have seen it many times before. Dinner on the other hand is a different story. I am going to have this, this week.

I FINALLY was able to find something that the blog world has been raving about for ever. I freaked out at the grocery store when I saw it. kabocha squash!!! I picked this beauty up and couldn't wait to get it home...I made this into this: Forget about desert...this is my new best friend. Whipped kabocha and mimic cream with a dash of cinnamon and some almond butter!!!! OH MY GAWD. My winter will never be the same. I kid you know. I also will be having this. Simple chicken salad. Yep. It is totally a well balanced meal if I do say so my self.
Some un-pictured snacks that I had to day was a few handfuls of raw almonds, a bell pepper dipped in spicy mustard and a square of 70% dark chocolate. Yep, these are the eats for this Monday peeps! Keep your eye on my blog....I am going to be doing a HUGE give-a-way this week and have some more reviews for you to read! I cant wait!
