Back to the grind.

Well, the weekend has come and gone and now I am back in Athens and back to work. The wedding went....well. I enjoyed my reunion with one of my best friends and someone that I had not seen in over a year. The hair and make-up went well and the bride was happy...The brides family, now that was another story. Everyone was stressed and to my surprise it didnt bother me at all. I was cool and calm. I think that going through it before helped ;) It did rain while we were there and it felt like the days pasted super fast but all in all I was happy with my trip. So on to my eats! Banana oats with PB2. It was just what I needed. On Mondays I need something warm and comforting. It is also the fuel that I am going to need to get me through the intervals this afternoon and caught up on my work from a long weekend. I made amazing food for the week this week! I got some egg plant, okra and tomatoes from Shelly's garden and my dinners this week will be fresh and simply amazing. This week it is CHICKEN. My snack though first is a ripe organic plum. Carbs right before the intervals always get me through! The perfect plum for a perfect afternoon. I am so happy that I was able to get organic plums at the grocery store last night.

After the snack and 50 minutes of intervals I came back to the office, chugged some much needed water and sunk my teeth into this!A baked chicken breast a top a bed of greens, onions and tomato. So simple but oh so good. I am not even going to need any dressing for this at all.


I will also have a side of hummus and chopped bell pepper later in the day to hold me over and get me through my lifting session that I plan to do after work. I need to get home and learn this song that I will be preforming at the end of the month. I have practice tomorrow and I want to be prepared. Here is the hummus and pepper... Of course I had a ton more sliced pepper to go along with it. It was yummy.

So here is a shot of the chicken as it was baking. This is what I do when I cook...I cook BIG and enough for the whole week. All natural chicken breast and here is the stewed veggies that will be along side. So colorful and SO good. This is the food for the week peeps. You more than likely will not be seeing my daily food in the rest of my posts. I am sticking to this for sure.
After dinner and yoga I will come home to a nice glass of wine and head to bed. I have a busy week and with it being my birthday in 2 days I am counting down to a long weekend!
