Whoa those berries are jumpin out ya! This is what I woke up to this morning. A big Ole bowl of Greek yogurt with some fresh raspberries and blackberries. I also put some salba in it to thicken it up and give me my omega 3's and fiber. This has been a great idea to start out light and then gradually get larger as far as breakfast goes. This is going to be what fuels me through my 3.5 mile walk in 55 minutes today. I am ready. Oh, and I will be having about a serving of raw almonds as well.
After breakfast and doin my job I went for a walk...Sweaty, over heated and famished I dug into this summer delight!
I decided that a ham and spinach English muffin was the way to go. I added some guac to the mix to make it that much more special...I also had some raw baby carrots and a side of this terrific but simple cucumber salad. Four ingredients:
-Cucumber
-Tomato
-Chopped green onion
-Balsamic Vinegar
It was awesome and I gotta say...I love having a sandwich after walking like crazy in the GA heat for an hour. I really deserve some carbs to replenish. I will more than likely eat more almonds (not gonna lie!) and then head on home. Today I am sore pretty much from head to toe so I am going to go for the walk but that just may be it. I do need to work out bicepts and Tricepts today though...Really bad. I may go there and do arms after dinner. We will see. Beth will be back today at some point and I know that I am going to want to go and do something. Well I skipped ahead didn't I! I need to tell you

This salad is one of my favorites at a local restaurant here in Athens. I crave and eat it at very least once a week. Well I will be eating it every single day for the rest of this week. WHY? HOW? Don't you need to be saving some m-o-n-e-y? Well yes! I just figured out a way to have what I wanted all the time. I knew that the salad that I so adored was just a salad. I mean, how hard is it to get the fixings for your favorite salad? Mine: Romain, pine nuts, mango, tofu, avocado, chili pepper flakes, tomato, cucumber, onion and broccoli. Well that isn't so special...Right? Well what makes you 9 times outta 10 want to go to the restaurant and get the dish that has been screaming your name at 2:00 a.m. on a Monday morning isn't because of the simple ingredients to make it. It is the DRESSING or SAUCE. That is when my brain said "Heather, just go to the restaurant, buy the damn Thai Peanut Dressing that you love there and make your own salad." This was like a light bulb not just coming on but bursting! I did just that and so now I am having my favorite salad all week AND the best part is...I can have as much as I want. I think of some really brilliant things sometime but this one is getting on up there on the list. The dressing cost me 1.05 for a HUGE cup of it (I mean, I can have this salad if I want for weeks!) and the salad that I usually go there to get is 10.00 plus I usually get a sake 4.00 and tip 4.00 to a total of 18.00. That is 17.95 that I am saving this week and potentially for several days people! AMAZING. See I can save this way and STILL get what I want. After the spicy dinner I will be sitting back and enjoy two more things (after about 2 hours of eating). This isn't just any bowl of strawberries. This is citrus Vodka and strawberries. I told you that I was having one drink at night this week to see if it helps with the cravings and who said that you had to drink it? This is my desert and treeeeaaaat!
