One to go!


Monday has come and gone and now it is all down hill from here. I am taking FRIDAY off so tomorrow will be the start of my weekend. I have no idea what I will be doing just yet but I will be doing something fun, for sure!
I got in a great workout yesterday, it has left my knees feeling a little off but I will take it a little easy today. Yesterday I walked 3.5 miles on lunch in 55 minutes and some light yoga when I got home from work! I have a review for you today but first breakfast! I decided on something more hardy as I was hungry
this morning!
I had Oats, wheat bran, salba, a spoon of fat free cottage cheese (to make it creamy), egg whites, walnuts and blueberries. This picture is before I popped it in the microwave. I love how my oats come out BLUE! I am trying my best to divvy up my portions so I am eating half now (9:30) and half right before my walk (12:00). This keeps me from walking on empty and will also keep me from getting a snack before as well. I even tried this system last night. I ate half of my dinner and and then when I got back from my work out I ate the other half. Usually I would have eaten another small meal. I am trying my best to save some cals. I am going to the beach in 20 days and want to make sure that I look great!

Hummus is a chickpea paste that is popular in various local forms throughout the Middle East, but its origins are unknown. In Arabic the word hummus is used to describe the dish or just chickpeas. This Salba Irish Hummus is flavorful and nutritious with an abundance of protein, fiber, and omega-3s. It is best served with warm whole wheat pita or whole grain crackers as an hors d'oeuvre for a spring picnic.
1 cup canned chickpeas, drained
1/2 lemon, juice
1 clove garlic
1/4 cup olive oil
1/4 cup sunflower oil
1 cup fresh parsley (keep some parsley for garnish)
1/4 tsp chili powder
1/2 cup water
1/2 tsp unrefined sea salt
2-3 Tbsp Salba Whole or Ground Seed

Mix all the ingredients with a blender until it is smooth and creamy.
Garnish with parsley.
Serve with warm whole wheat pita, toast, crackers or vegetable sticks.
