Gooood Morning and Happy Monday!!! I am happy to say that this weekend was very relaxing and super low key! I sure needed it. This morning started out just right with my own favorite recipe. I start my morning out every day with some yummy oats. My favorite combo is:
1/2 cup of organic oats
1/2 cup of fat free cottage cheese, 3 egg whites, 1 tbl spoon of hazelnut sugar free creamer, 2 tbl spoons of chia seeds and a small hand full of goji berries. This is so filling and really gets my day started off right. I know that the weather is starting to warm up one thing never changes...My oats! Try this out if you dare. It is super high protein (33 grams!!!) and only 31 grams of carbs. Now that is what I call a power breakfast. Now I know what you are thinking...Egg whites and cottage cheese in your oats??? Well The egg whites make the oats so very fluffy and the cottage cheese once melted gives it the creamiest consistency ever! Throw in some chia and berries and man oh man you have yer self a awesome breakfast. I usually start my morning at 7:30 followed by 20 minutes of yoga then I get ready for work, hop in the car get to work, pour myself a big cup of coffee and at 9:30 I have breakie. Then the phone calls, e-mails and work load starts!
So at 12:00 right before I got to the gym on my lunch break for some lifting I eat this:
Three egg whites and a soy patty. This is so filling and gives me the protein that I need to build muscle.
Now I must warn you now. I am on a body building diet right now and eating about a pound and a half (of what I weigh) of protein. I aim for about 130 grams of protein a day and I try to get around 120 grams of carbs and about 25 grams of fat a day. My fiber is always fine (thanks chia!). So if you are thinking to yourself "This girl eats a ton of protein" you are right! Hey, I gotta do what I gotta do to get ripped!
Anyway, this weeks lunch is going to be low carb bocca burger wraps. I am siked! See, I have the same food and snacks usually for the whole week. It is easier that way and allows me to now even think about it. This menu changes every week so dont think that I am eating the same ole' same ole every single day. I am working on Shoulder and abs today from 1:00-2:00 and when I get done I will be getting my carbs and protein from this!
This is a low carb whole gain wrap with a vegan bocca burger, Romain, onion, tomato and some mustard and veganese! Yum!
Then I usually have a huge cup of green tea. Lately I been making my hot green tea and then putting it in the fridge for 30 mutes while I eat my lunch and then I get the cooled green tea and pour it over ice. It is really energizing!
For my last snack of the day I am going to have a carb watcher yogurt (dont have a picture). I have this around 3:00 p.m. and then when I get off work (4:30) It is straight back to the gym for some cardio usually. Well, unfortunately I have been having some major knee trouble and I am going to have to really take it easy this week. I decided that today I will be going to a hour and a half yoga class. This should give me a great stretch and lengthen my spine a bit. I am also hoping to go on my daily walk for 45 minutes.
Then for dinner this week. I will be having fresh tofu, green pepper, yellow and red onion, mushrooms and sesame seeds. I tossed this is a great gluten free spicy sauce and will be having it over a bed of mixed field greens. I will add avocado on top and have a side of cucumber and hummus. It will fill me up pretty quick!
My cals for today is right at 1,015. 95 grams of carbs, 33 grams of fat and 100 grams of protein. That is not enough food so expect that I will be adding in another snack for about 300 more cals and some quality carbs and protein. I am aiming for about 1300 cals (I am a small person) and at this amount I am maintaining my weight (120 pounds) I would like to get to 117 pounds with a lean and muscular build but I tell you what...It is so hard to loose fat and keep the muscle at the same time. Thanks to BCAA's I am slowly but surely getting there. So I hope you have enjoyed reading and I hope even more your Monday goes by fast. I am going to be receiving my samples of products very soon so keep an eye out for some delicious reviews!
SO! I am so very excited I just got a reply back from Kerrigold and they are going to be sending me some of thier lovely cheeses and butters! I cant wait to review these! Thanks so much Molly!
Below is some additional information on Kerrygold Irish Dairy Products.
Dairy cows, milk and butter have been part of Irish society for
thousands upon thousands of years, according to the Cork Butter Museum
in Cork city, Ireland. Cattle have been in Ireland since 3500 BC. Much
of the milk from dairy cows was turned into butter. The Cork Butter
Exchange, a market created by the merchants of Cork city in 1770, was in
its time, the largest butter market in the world, exporting butter as
far away as Europe and America.
Today, most of the milk from Ireland's small dairy farms go to local
co-ops, where milk is collected, then sent on to be made into butter and
cheeses using age-old processes. The supplier cooperatives have formed
a distribution, marketing and selling cooperative, the Irish Dairy
Board. The Board exports the dairy products the world over, on behalf
of its member farmers and processors. This form of cooperation ensures
the viability of Ireland's small family farms.
The resulting dairy products are all-natural. Cows are not given growth
hormones that can find their way into the milk. Ireland is the ideal
environment for the production of milk and milk products from grass.
Irish dairy farmers manage their small holdings (40+ acres) tightly to
ensure the optimum access of their herds to fresh, edible and nutritious
grass. Any pesticide use on pasture would interfere with dairying and is
not countenanced. Cows must be well fed and maintained at the right body
condition in order to stay fertile and produce quality milk and this is
key to quality dairying in Ireland.
Kerrygold Key Benefits
* Kerrygold products are entirely hormone-free.
* Kerrygold uses natural farming methods and centuries-old processes to

dairy herds enjoy fresh pastures
* Ireland is one of the only places left where dairy herds roam free.
Irish Dairy Board Background
* "Kerrygold" is the international brand of the Irish Dairy Board.
* Kerrygold is a cooperative; the milk used to make cheeses and butter

Kerrygold's exacting standards.

countries and sales approaching $2 billion, Kerrygold adheres to a small
farm approach.
I cant wait to see who else is going to allow me to review for them as well. This Monday has turned out to be pretty darn good ; )
