SPIbelt

Good Morning and Happy Wednesday!!! I got a really cool package in the mail a few days ago. When I tried it out I couldn't wait to share this neat product with you! Smoothie Time is back! I am sooooo glad that the weather is getting warmer because I love to eat mainly raw and I missed my smoothies so very much over the winter months. Spring Challenge

Hello all!

I have to say, it feels so darn good to be back. Blogging is something that I REALLY like to do and I find that it keeps me on track! I know your reading so it helps me make good decisions. I know that sounds funny but hey, whatever works though!


I am really wanting this week to be stellar as far as food and exercise and I am going to set the stage so to speak and make absolutely sure that I do just that. It's a new month so lets do this!!! I love to start a challenge and I want you to join me! First challenge that I want to set is: EATING 5-6 TIMES A DAY!




If you are trying to lose weight, you should get regular exercise and eat a healthy diet. You should consume five to six small meals daily instead of three large meals. If you eat often, your metabolism stays active all day long and you have more energy. Your blood sugar level will stay stable and you will be less likely to give into cravings for result-sabotaging foods.



1. Prepare your meals ahead of time. Have meals readily available so you are less likely to skip them. Invest in plastic food containers so you can easily transport foods if you need to. This is a tough one for most but I gotta tell you. If you do it once, you will be hooked. I cook my food for the whole week on Sundays and even though it takes me a few hours to do and I dislike it at the time, I am always glad that I did come Monday. Always.



2. Increase the number of times you eat each day gradually. Eat four portions per day for an entire week and increase to five small portions the next week. Add one more meal the following week to consume a total of six portions. Consume a small meal every two to three hours daily. If you dont want to worry about planning 5-6 different meals then do what I do sometimes. Take your three meals and divide it up into 6. Breakfast should be cut in half, eaten, and then the other half two to three hours later. Same for lunch and dinner. That is a easy way to get in 6 small meals and keep that metabolism in high gear!



3. Avoid restricting entire food groups. Include complex carbohydrates such as whole-grain bread, brown rice and whole-wheat pasta. Consume lean protein including tuna, chicken and turkey and eat unsaturated fats such as avocados, raw nuts and olive oil. Consume carbohydrates, protein and fats at a ratio of 40:30:30. This is a hard one for most. We all have what I like to call "fear foods". I will admit, I have a list myself of things that I just wont eat. I am however getting better at pushing the envelope and intern it is shocking my body. The main thing here is to keep your body guessing. This goes for exercise, and food.



4. Keep healthy snacks such as nuts, fruits or protein shakes with you at all times. Eat them when you experience cravings or instead of a meal.


5. Perform cardiovascular and strength training exercises, three days per week. Run, bike, swim or walk for at least 45 minutes to increase your metabolism. Work out with weights to increase muscle tissue and burn fat even when you are at rest.




These are just a few tips that I have! Now, lets commit to eating 5-6 times a day for the next week and then we will build on to it. What do you say?!?




I am also giving up my occasional beer for a glass of white wine. It is just something I need to do before it becomes a habit sooooo, just thought I would be honest and share this as well!

No really...

Good Morning!!!




I am back! I have had so much going on the last 6 months, it is not even funny...I wish that I could fill you in on all the goodies in my life but this would take about 8 posts and we just don't have time for that, now do we? I will say, I will give you the readers digest version. I have a new job! I was in the banking world for 5 years and it was slowly killing me. I must admit, I liked the schedule that I had made for my self and all but other than that, I got nothing out of it. I was afraid for years to let go of my schedule and routine but I recently decided that enough was enough and I needed something more. I got a job with a non-profit org and it is another world. So different than the corporate atmosphere that I came from. I can tell you that much! I will say, my schedule has completely changed. Going from an hour lunch break where I would change clothes in the bathroom and then walk or run for an hour to 30 minutes and being out in the middle of nowhere is quite the change. I was thinking that I could wake up in the mornings and go for my walk/jog but lets face it, I am not a morning person! I gave it a go (maybe when it warms up more I will get my butt out of bed) so I have had to think about other options. Some of you already know (PLEASE, tell me your still with me!) but I like to break up my workouts into two. Because I sit on my butt all day at work I need to get two workouts in and I prefer to do some sort of cardio and then some sort of weight lifting, separately. With this being said, I have no problem going to the gym after work or in the evening but this does pose the question "How will I get in my other workout?" Well I am just going to have to do one of two things, either suck it up and get up in the morning or utilize the 30 minutes I have. I am going to see how 30 minutes of walking goes for me. I know that is not enough but I cant change clothes here for 30 minutes and then get back to work...I am going to figure it out but if you have any ideas, let me know! I am open! Some other things that have been going on with me besides my new job is new personal training clients! Yay for Spring! I love it when it warms up because this means that weight loss is on most people's minds and I am always here to help. I have a few gals that are going to show me how it's done this Spring and get in the best shape of their lives! I have also incorporated some new foods into my diet AND some new moves! I will admit, I have gained 10 pounds since December. I am kinda excited because not only will I be motivating my clients, I could use the push as well. I am thinking that this is going to be a wonderful Summer and I intend to beat my personal best, over and over again. Now, lets get down to my eats! You know that I show you yesterday's food so follow me weekly to get a full picture. I usually try to eat the same thing Monday-Thursday (after all, I am a single gal and can get away from it!) I will be sharing my amazing chicken salad recipe with you all. Your going to die when you taste it for yourself! So here's the run down:

8:00 AM- Just a hand full of raw almonds.



















When I get up in the morning I try to get something into my mouth a.s.a.p. Gotta get the metabolism going! Raw nuts always hold me over and have so many benefits!





Up next!





















10:00 AM- My favorite winter breakfast turned Spring/Summer. Overnight oats! This is amazing and I am never let down when I eat this. Super easy and it makes itself! Gotta love that! The night before you want to get a container and put one serving of greek yogurt (plain) with a packet of stevia (to sweeten up), 1/2 cup of oats, 1 cup of almond milk and then whatever fruit or toppings you want! I mix it up. You could do banana w/ pb, apples and walnuts, blueberries and sunflower seeds, it is endless! If you dont like or have greek yogurt on hand you can pour some egg whites into it. It is important though that you add protein to your oats, otherwise you'll be starving!

I am trying to just eat fruit now alone. I use to be obsessed with trying to get a protein and good carb with every "meal" not so much anymore. My tummy thanks me.



After my shorter than usual walk I came back to the office and had this! 2:30 pm-I love Ezekiel products (in fact the only bread that I will eat except for TJ's bean bread. I mad a chicken salad that would knock your socks off and I will tell you the recipe tomorrow! This is the package for the Ezekiel wraps. At Kroger in the frozen foods section bottom shelf. Jeeze, I make it easy!



































This was stuffed with chicken salad and I had this after my workout. Mmmmmm!
























5:00 PM- I am home and about to head over to the gym to train and then get in a workout myself. Today will be chest and back! I munched on some raw tofu and veggies to give me some energy (and protein) to build these muscles! Here we go!





7:30 PM-

















Totally worn out and ready to call it a night I had some butternut squash soup and then my usual frozen fruit at around 9:00PM for my desert.




Tonight's fruit is papaya! Who could have guess?!?! Sorry no picture! I just chopped up some and stuck it in the freezer for about 30 minutes. Ice cream, I swear! I love, love, love frozen fruit and this one is the top of my list. I also indulged in a small glass of wine (this I am trying to cut out except for two glasses of wine Friday and Saturday. Yes, there is room for wine in your diet, you just have to be choosy. So this is it my dears! My eats for the week. I cant say that it is perfect but I am working on it. I have had a bite or two of dark chocolate as well, I ain't gonna lie! I hope to have some reviews for you guys soon and I hope you all have a wonderful day! We are so very close to Friday and I couldn't be happier! See you tomorrow!

New Year, new you?

What does the New Year mean for you?

Usually, the 1st of the year is a "year in review" post for me. I like to go back and pick out some of my highs and even the lows that occurred throughout that particular year. It is always shocks me just how much I pack into one 365 days. 2010 was no exception for me. I am still going to do a year in review, just a little different this time. You see, I went to get started on mu usual end of the year post to find that my domain was taken. Much to my surprise, there I sat, staring at website I had never seen. I tried and tried again but there it was, plain and clear. My blog, was no longer foodnfeelings. I cant tell you how upset I was. I literally saw the last three years of typing until my fingers cramped down the tubes. Yes, maybe a little dramatic but oh so true. I then realized that I could always go back to my blogger domain and I guess buy a new one but I wanted the one I had. The name I came up with. I thought about that blog name for months. I came up with a icon and everything. With all this being said, I don't have the domain name and cant get it back. I tried everything that I could but no luck. Sorry if you all typed in my web address to see the same website that made me gasp.

This New Year means so many things to me. In fact, this year has more pressure behind it than any of the others. I am not sure why but I feel it deep within myself that something is going to happen this year that will change me forever. Who knows!?! If that isnt a reason to keep reading I dont know what is! This year means a new blog. Yes, I will be constructing a new blog with all new material this year. I was M.I.A. for the last few months of 2010 and I vow to post and keep my blog alive. Health tips, motivation, recipes, reviews and of course me and the crazy things that happen in my life day to day. This year lets not just talk about what we are going to do. Lets move while we talk about it! I mean it. Next time you want to catch up with a friend over some coffee just say this. "I cant wait to see you and hear all about what you have been up to! Instead of getting coffee would you like to go for a walk and talk?" Or even better "Would you like to come over and we walk to the coffee shop so we can get some exercise, yummy coffee AND hang out?" I bet you anything that if you ask someone to do something active with you, they will. I bet you that if you asked someone to go on a walk with you, they would. Dont take my word for it though, just try it.

So, keep reading and dont be surprised when you see a fancy new name, logo and look. This year folks means, a "new" me! I recently cut my hair short so I already have a head start on a new look. I do have some resolutions for the New Year but I always have a goal in mind and always willing to make what I think good, better. How about you? Anything you really want to come true for you this year? What's stopping you? Who cares if it is the 3rd, 5th or 29th. Get started right now. Not tomorrow. Now. Who cares if you blew breakfast and you think that today is just a loss. Get on track NOW, not tomorrow. Who cares about the time of day or number on the calendar? Today my friends has no number, it has no time table. It is NOW. There is no time like the present. Period.

Now that I have given you the low down on the blog, a little pep talk about getting yourself back in the right direction I feel MUCH better! It has killed me not being able to write here and even if I had no readers I would do it. I want you to think about this. How about signing up for a blog (it is free on www.blogger.com) and blog for yourself? Wow! I bet you never thought about this. Do you know how easy it is? I know what your thinking "But I sit at the computer all day, I dont want to blog." Well, I will say this. Having a blog is better than a diary, it is better than those "before and after" pictures it is better than a time capsule. What if you started a blog for one year devoted to 2011 and your journey throughout the next 360 days?

Eating healthy at work.

1. Cook a big batch of food on Sunday, such as veggies and pasta, or chicken and brown rice, and freeze portions to take to work with you for lunch. Added bonus: you'll save the money you'd normally spend on all those visits to the salad bar.

2. Don't skip breakfast! Breakfast kick starts your metabolism, and it's also healthier to eat larger meals earlier in the day because you'll burn them off when you're running around the office (or madly typing away at your computer). If you don't have time before work, bring low-fat greek yogurt and a banana or peice of fruit to eat first thing.

3. Stock your desk area with healthy snacks, so an apple or some raisins are always within reach. What kinds of things should you bring to work for snacking? Find the healthiest versions of the snacks you love, and bring them to work. Try air-popped popcorn, low-sugar or juice-sweetened cookies and granola bars, and baked wheat crackers. Go an extra step and buy organic items - these usually have less artificial or unhealthy ingredients - and always read the label to make sure there are no hydrogenated oils.

4. Consider your weaknesses. Think about the biggest challenges for you, healthy eating-wise (no refrigerator at work, picky eater, chocolate-lover, etc.) and use them to your advantage. For example, bring foods to work such as apples and bananas, that don't need refrigeration, or plan out healthy meals that you'll actually like. And try dark chocolate - recent studies show it may lower blood pressure.

5. Try one new fruit or vegetable per week. Ever tried bok choy? What about papaya? There are plenty of new fruits and vegetables out there for you to try - stock up at your local farmers market (buying local is also very environmentally conscious) or visit an ethnic market.

6. Don't completely cut out carbohydrates and fat. Healthy fats, such as those found in nuts (also useful for snacking), and whole grains give you the energy you need to get through the day.

7. Keep portion size in mind. If you visit the deli at lunchtime, buy half of a sandwich, or split something with a friend. Alternatively, try bringing frozen veggies to work, and mixing them together to split with co-workers.

8. Hosting a meeting? Bring some healthy snacks, instead of the usual donuts and pastries. Provide fruits and/or veggies and hummus, cheese and wheat crackers.

9. Always keep a supply of water handy. Most offices have water coolers, so bring a large glass or thermos, or keep a water bottle nearby that you can refill. No water cooler? Stash a few reusable water containers in your bag before work.

10. Take a lunch break. No matter how busy you are, it's both physically and mentally healthier to take a few moments and read, sit outside, or chat with a friend, while enjoying a healthy meal. You'll be re-energized once you return to your desk.

If you pair lack of exercise and poor eating you get weight gain, big time. Lets try to stick to a plan if at all possible and end the year right! Some businesses open their doors with minor motive, others with a massive mission…though if you take the time (or Business School courses) to profile the ones that make it, you'll find that those that succeed usually have one thing in common—the ability to provide a product or service better, faster and more efficiently than most anyone else.
Case in point, the impetus behind the Klein family's decision to open the doors of their first (of four and counting) Oh Nuts store back in 1992.
You see, before they got the world to "go nuts for Oh Nuts", the Kleins were the proud and successful owners of a well regarded wholesale nut and confectionary products company. As the bulk of their clientele was caterers and manufacturers rather than retailers they spent an inordinate amount of time at various food and food related tradeshows. During the conversations with both fellow exhibitors as well as attendees they realized that the food chain that linked product to actual consumer had more levels than a video game. The difference was though in a video game reaching a level means you're good enough to be hit with fresh challenges while adding a level to the retail process usually meant losing a level of freshness and quality as the distance from source to store got that much longer.
Which inspired the Kleins to ask, What if we took a detour around the numerous distributors, sub distributors wholesalers and sub wholesalers? What if we opened a store where the selection was farm and factory fresh because its inventory came directly from a wholesalers that dealt directly with the brands? An added benefit to this unique idea was the ability for the Klein's new retail entity to sell in bulk—vs. just the pre-packed, pre measured quantities and combinations that the manufacturer or distributor deemed desirable. This meant that if customer A wanted no black jelly beans and customer B wanted ONLY black jelly beans, there was finally a retail entity to make this jellybean dreams a reality.

What's in a Name?
As legend has it, a number of the Klein's friends who heard the idea said you could go nuts trying to name a store like that. In their excitement, the Klein’s thought their friends said "Oh Nuts" instead of "Go Nuts" and proceeded to throw caution to the wind—and themselves into designing a 15x15 retail space into a warmly cozy experience that would become their flagship store.
While their products were both dairy and non dairy, their first Oh Nuts hand a definite dairy dynamic if for no other reason than the fact they used milk crates as display shelves.
Though as these shelves were displaying absolute freshest selections of imported and domestic nuts, dried fruits and confections, they quickly realized that consumers liked their fresh approach to retailing.

For Pete's sake!

If you are Gluten free because you want to be or because you want to be than today's post is for you! I had a boyfriend once that was gluten free because he was a siliac and it challenged me in every way when it came to cooking. Well, he challenged me in everyway anyway but well stick to the eats for right now :)

When we first started dating I didnt know what "gluten free" was. I was almost scared by the thought of gluten free cooking and was intemidated by the long list of foods that he couldnt eat or incorporate into his foods. After a little while and much research I became excited about cooking for him and wanted to make him all his favorites. You take things like pizza, pasta, burrito's and oatmeal for granted until you cant have them. I was not about to let a intolerance stop me from making some of the best food I have ever tasted. Of course, I had a few bumps in the road (I will say that baking is tough) but all in all, I got the hang of it quickly. I made all the things that he couldnt have and then some! I have spent Thanksgiving with my now friend and always love to make my foods that I grew up with gluten free. Today, I am about 80% gluten free. After dating someone with the food allergy and omitting the foods out of my diet I realized just how hard white flour, barley, wheat and rye can be to digest! Well my friends, today's post is perfect for Thanksgiving and if you want to really impress someone that is gluten free or you want to try something new, this is the recipe for you! Hope you enjoy!

Gluten-Free Herbal Bread Dressing is a good example of how gluten-free cooks can adapt traditional recipes to gluten-free recipes that are fit for a feast that everyone can enjoy. The foundation of this recipe is Gluten-Free Walnut Rosemary Bread, with texture and flavor ideal for bread stuffing.

Prep Time: 30 minutes
Cook Time: 50 minutes
Total Time: 80 minutes

Ingredients:
8 cups cubed Gluten-Free Walnut Rosemary Bread OR your favorite GF bread (1/2 inch cubes. crust removed)
1/2 cup butter (1 stick)
2 cups chopped onion- Walla Walla or other sweet variety if possible
2 cups chopped celery with leaves
1/2 cups chopped fresh chives
3 tablespoons minced fresh sage
1 tablespoon minced fresh thyme
2 lightly beaten large eggs
1 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
1 cup gluten-free chicken broth
Preparation:
Preheat oven to 350°

Directions:
Spread bread cubes in one layer on 2 large baking sheets. Bake for about 12 minutes or until cubes are dry, but not browned.
Allow bread cubes to cool. Place cooled cubes in a large mixing bowl.
Melt butter in a large saucepan over medium high heat. Add onions and celery and sauté for about 10 minutes or until onions are translucent, but not browned.
Add herbs to vegetables and sauté an additional 2 minutes.
Add vegetable herb mixture to bread cubes and stir to mix.
Pour lightly beaten eggs into mixture and stir to blend.
Add salt and pepper and stir to mix.
Add gluten free chicken broth and stir to thoroughly combine all ingredients. If the stuffing is too dry, add more broth, 1 tablespoon at a time, being careful not to overdampen or stuffing will be soggy.

Transfer stuffing to a buttered 13x9 inch baking dish and bake for approximately 50 minutes or until the top is golden brown.Tips: If you like a heavily flavored stuffing, add 1 tablespoon of gluten free poultry seasoning to bread cube mixture before baking.Test flavors and moisture content- Melt 1 teaspoon of butter in a small skillet. Over medium heat, add 1 tablespoon of stuffing and cook just until golden brown. Taste and add more herbs, salt or pepper if needed. If the dressing seems too dry try adding another egg. Too much broth can make the dressing soggy.Always make sure your work surfaces, utensils, pans and tools are free of gluten. Always read product labels. Manufacturers can change product formulations without notice. When in doubt, do not buy or use a product before contacting the manufacturer for verification that the product is free of gluten. You can add anything that you want to this recipe...Cranberries, mushrooms of sorts, shaved almonds...be creative!

Healthy Holiday Eating Tips for Thanksgiving

Do you know that the average Thanksgiving dinner has over 2000 calories? It can be a real challenge if you are watching your waistline. The following are some eating tips so that you can still look good and be healthy after the Thanksgiving dinner without having to deprive yourself.

If you are a guest of a Thanksgiving dinner:

Don't go to the Thanksgiving dinner hungry: we often eat faster and more when we are hungry - therefore eat a wholesome breakfast and lunch on the day to avoid overeating at dinner time.
Thanksgiving dinner is not an all-you-can-eat buffet: Fill your plate half with vegetables, one quarter with a lean meat and the rest with a starch of your choice. Eat slowly and stop when you are full.
Turkey - go skinless: choose your 4-oz turkey portion skinless to slash away some fat and cholesterol. Save your appetite for the side dishes and desserts.
Side Dishes - watch your portion size: go for smaller portions. This way you can sample all the different foods. Moderation is always the key.

Make a conscious choice to limit high fat items: high fat food items can be found in fried and creamy dishes as well as cheese-filled casseroles in a traditional Thanksgiving meal . For instance, mashed potatoes are usually made with butter and milk; green bean casseroles are often prepared with cream of mushroom soup, cheese and milk and topped with fried onions; candied yams are loaded with cream, sugar and marshmallows. If you cannot control the ingredients that go in to a dish, simply limit yourself to a smaller helping size. Again moderation is the key.

Drink plenty of water: alcohol and coffee can dehydrate your body. Drink calorie-free water to help fill up your stomach and keep you hydrated.

Substitute high fat ingredients with lower-fat or fat-free ingredients. Learn about the 5 easy steps to recipe substitutions or see table below.

Leftover Turkey? Instead of turkey sandwiches, use the leftover turkey to make a pot of soup with fresh chunky vegetables.
Experiment with new recipes: I did a search on Google and found numerous delicious yet healthy low-fat contemporary Thanksgiving recipes. Experiment!

Recipe!


Lemon Chicken
Prep: 15 minutes
Total: 25 minutes
Yield: Serves 6
1 tablespoon chopped garlic
2 tablespoons plus 1 teaspoon olive oil, separated
3 cups low-fat, reduced-sodium chicken broth
2 tablespoons freshly squeezed lemon juice
2 teaspoons water
2 teaspoons cornstarch
1/2 cup cauliflower puree
1 tablespoon chopped parsley (optional)
2 large egg whites
1 large egg
1 cup whole-wheat flour
1/2 teaspoon salt
1 teaspoon garlic powder
6 boneless, skinless chicken breast cutlets (about 2 1/4 pounds)


Directions:
In a heavy-bottomed saucepan over medium heat, sauté the chopped garlic in 1 teaspoon of the olive oil until it begins to turn golden brown. Add the chicken broth, turn the heat to high, and reduce by half, about 8 minutes. Add the lemon juice.
In a small bowl, combine the water and cornstarch. Slowly stir the cornstarch mixture into the boiling chicken broth. The mixture will thicken quickly. Add the cauliflower puree. Sprinkle in parsley, if desired. Cover to keep warm and set aside.
Meanwhile, begin heating the remaining 2 tablespoons of olive oil in a large heavy-bottomed skillet over medium heat. Whisk the egg whites and egg in a shallow bowl. Combine the flour, salt, and garlic powder on a large plate. Dredge each chicken cutlet in the seasoned flour and then dip in the egg mixture. Drop the cutlets directly into the heated skillet. Sauté 4 to 5 minutes per side, until the chicken is golden brown and cooked through. Add the lemon sauce and cook 2 to 3 minutes more to combine flavors. Serve.

I can honestly say that I am surprised how fast Thanksgiving is approaching. I am ready to get started with Christmas shopping and I am hoping that you are too.

I have to say, it is always great to speak directly to the creator themselves and get a birds eye view of the product and company before I receive the package. I was impressed by the questions that she asked me and felt so special that she decided that I would be worth the expense to send me some of her amazing clothing. The early years:
From birth I always loved my name and wanted to do something fun with it. I always loved being cute with little to no effort. I was always very interested in fashion and clothes. I always enjoyed lounging around, alone or with others.

College, circa 1996
Following 4 years of study, internships and more internships, armed with a journalism degree, I set off to Dallas, TX for an exciting life in the world of advertising.

The ad agency years: 1996-2007
I did what I set out to do. I landed a job at the big ad agency, then had a short stint in a major retail corporate marketing department before heading to the next big ad agency. I got to travel all over to this photo shoot and that TV shoot. I met some cool people, stayed in some great hotels and had some amazing meals. But in the back of my mind I wanted a different life.

The epiphany: summer 2003
One weekend my lifelong best friend, Kandy , came to visit me in Dallas . We shopped every TJ Maxx and Marshalls in the city, obsessed with finding cool pajamas and sexy moo moo's (that was tough). When the time came to decide what to return and what to keep, all of my new pajamas and loungewear were in the "keep" pile. Being cute and sexy at home, even when I'm just hanging around by myself was always my thing. You never know who might drop by.



But I couldn't sacrifice comfort and I found it difficult to find things that fit all of my needs; sexy, comfortable, current and company appropriate.. Then, one day it hit me, "Why don't you just create your own line of loungewear that is everything you'd want it to be?" So I did. Through much trial and error, self-education, and passion, Erin Braxton loungewear was born.

Today...
In 2007, I relocated myself, my business and my Westie to Los Angeles to pursue my loungewear dream. The fact that I'm not a traditional fashion designer has helped to keep me going and positive. I love creating beautiful things for women that they'll enjoy.
