Monday's can be fun days....right!?!

Can you believe that we are already in the second week of August??? I cant. September will be here before you know it. How was your weekend? Either it was great or it was crazy. My weekend was packed and I still feel like I am running. I know that this is going to be the theme for this month, Friday's post tells you why! Anyway, lets get on with some necessary eats! Some mornings I am starving, some not so hungry. THIS morning, I was more than hungry. I was starving. I have figured out why this happens. If I eat right before I go to bed I am so hungry in the morning. If I dont eat anything about two hours before bed (like I should) I wake up less hungry or not at all. Because I ate a late dinner (and a even later snack), this morning I was more than ready to chow down. I knew just what I was going for on this Monday morning. I made some more quinoa muffins and man....they are good!
This was the same recipe from last week except with blueberries. It was awesome! My coffee was just as good ;0


I swear I could eat a million of these (just might have over the weekend!) When you are making muffins that have protein, good fats, good carbs and even a serving of vegetables in them there is not a lot of guilt there. I could have buzzed on for hours but I needed a break after three and this little snack did the trick!


A granny smith apple smothered in almond butter. MMMMMMMM. It doesn't get better than that my friends!


I gotta say, this one of my favorite pre workout snacks. Light enough to not upset my stomach but dense enough to push me through! Just what I needed!


I wanted to touch a bit on my training lately. I haven't been keeping you up to date on the hard work that I have been doing and I am sorry. Tomorrow's post will be devoted to a interval workout that will kick your bootay! I am all for a good sweat session and I should be better at getting you guys and gals some new ideas!



Lunch is what it has been for weeks, not complaining one bit about this one! I have been eating this for lunch for so long, because it is oh so good! My girl over at bodyrock.tv has me hooked on this mini meal. I love it! Toast a piece of a whole wheat bread (I choose Ezekiel). While the bread being toasted, cut one tomato and a small part of onion into little pieces. Put the veggies into a bowl and add about 1 small teaspoon of olive oil, a little bit of salt, pepper, and fresh basil. Mix it all together. You can also add a few drops of balsamic vinegar or lemon juice. When the bread is toasted, take one clove of garlic and rub it on the top of the bread. Cover the bread with the tomato mixture and grate some mozzarella on top. Yum.


That is the work day eats pretty much for today (maybe a un-pictured piece of 70% chocolate was consumed too). A girl has got to get her chocolate fix in!


Dinner...well you should know that I have finally kicked my papaya and yogurt habit. Well, sorta. I am still enjoying that combo but having it as a late night snack or breakfast these days. I realized that I need MORE veggies in my diet! I have a recipe that is going to rock your world for the kale chips that I made Sunday. I will share, promise! For now though you just get a sneak peek. Dinner, the way it ought to be!


Because I have been getting so many questions about how I cook for the week, I thought I would just show you instead of my dinner plate. This my friends is what Sundays are devoted to! Yes, I cook dinner for myself for the whole week in one day! I don't cook the veggies all the way so that they are still full of all the nutrients that my body needs and most of the time (during the summer anyway) I try to pick a menu that will suit me if eaten cold. I haven't had a hot meal in months and I am just fine with that! Here you go, in picture form!

Baked tofu (olive oil, fresh basil and thyme, tamari and water with a squeeze of agave).

and last but certainly not least, KALE CHIPS!!!
I used red and green curly kale. I gotta say....this dinner for the week turned out pretty amazing...I will be telling you all how to make kale chips (and yes even without a dehydrator) this week. Keep your eyes pealed!
I gotta go but I want you all to know just how much it means to me that I was gone a couple of days and how nice it was to get all the e-mails wondering where the heck I was! It really means a lot. Currently I have no Internet at home and work right now is out of control (yes, mom....I am GRATEFUL to have a job right now AND not complaining, just telling ;)
I am going to do my very best to post as much as I can but if I miss a day or two I am ok!
